This healthy blackberry smoothie is a low-carb and high-protein vegan breakfast with cauliflower rice, almond butter and a rich, creamy texture.
If you know me, you know I love starting the day with a smoothie. And depending on the season, I like to switch up the ingredients. During the winter, I'm all about a Pumpkin Spinach Smoothie. In the spring, it's Minty Melon Smoothie and during the fall, I love this Healthy Carrot Cake Smoothie.
During the summer, though, I'm all about fresh berries! And this blackberry smoothie is my go-to. It's creamy, thick and full of protein and a luscious, nutty flavor from coconut and almond butter.
How To Make the Best Blackberry Smoothie
This is a straightforward recipe that tastes like a blackberry pie. Here are the ingredients to make your creamy berry smoothie:
- Frozen blackberries. You can also use fresh berries too, but the texture will be thicker with frozen fruit.
- Cauliflower rice. This is an easy way to bulk up your smoothie and make a dreamy texture without adding a lot of heavy ingredients.
- Almond butter. You can use any nut butter you like. Or to keep this recipe nut-free, use sunflower seed butter.
- Coconut flakes. Just one tablespoon of coconut adds a nice tropical spin to the smoothie.
- Vanilla protein powder. Feel free to omit the protein powder or use a different flavor if you like.
- Coconut water. This is a super-hydrating liquid to help blend your smoothie.
- Almond milk. Feel free to use your favorite vegan milk in the smoothie.
Tips & Tricks
- For a thinner smoothie, add more liquid during blending.
- To make this blackberry smoothie without nuts, omit the coconut and swap almond butter for sunflower seed butter. For the milk, use oat or hemp milk.
- You can prep the smoothie ingredients in a bag in the freezer. Then, when you're ready to serve, dump everything into your blender, add the coconut water and milk, and blend.
Can I Make a Blackberry Smoothie Bowl?
Yes! If you want to turn this sippable smoothie into a spoonable bowl, you definitely can. Simply add less coconut water and/or almond milk for a thicker texture.
