Fig & Goat Cheese Crostini (GF)

I just discovered figs this season. Can you believe it? I know, I feel like I'm totally behind the times. How did I not know that these brown little fruits were juicy, succulent and delicious?

Well to say that I've been enjoying them is an understatement. I've been tasting and experimenting, and loving every minute of it. Thinking that I would like them most in the form of a tart or pie, that's what I started with, but I've come to realize that I actually prefer to eat these wonderful gems in their true form.

Just sliced and served.

This crostini is stunning. The goat cheese and pesto, lightly spread on a grilled slice of gluten-free bread is the perfect base to the sweet figs. And topped with a drizzle of balsamic syrup and you'll be sent to heaven.

Fig & Goat Cheese Crostini with Balsamic Drizzle

Ingredients
  

  • 2 slices gluten-free bread grilled
  • 6 - 8 figs halved
  • 4 oz goat cheese
  • 1 cup basil
  • 2 - 3 tablespoons olive oil
  • 2 - 3 tablespoon nutritional yeast or parmesan
  • Salt & pepper to taste
  • 1/4 cup balsamic vinegar
  • 1 - 2 tablespoons honey

Instructions
 

  • Add goat cheese, basil, nutritional, salt, pepper and oil to a food processor and process until smooth.
  • In a small sauce pan, add the balsamic vinegar and honey, and whisk together until the honey has dissolved. Bring the mixture to a boil and turn down to simmer until the liquid has reduced by half, about 2 - 3 minutes.
  • Assemble the crostinis by spreading the goat cheese mixture on each slice of bread. Top with sliced figs and drizzle with warm balsamic syrup.
  • Enjoy!

  1. I really haven’t eaten too many figs in my day. But they are delightful when they are fresh like this! Great way to use them.

    I absolutely love fresh figs… my grandmother has 2 fig trees in her garden, so I’m lucky to enjoy them every autumn. I also like fig jam and fig tart and almost anything with fig in it.

  3. oh dear.. First of all, I can’t believe you’ve only recently discovered figs! I remember walking home from school as a kid (which, incidentally, isn’t as long ago as that statement makes it seem..), and every day as I passed a fig tree I’d pick out a few and indulge on them .. They really are amazing!
    This recipe seems incredible. Okay, so a non-vegetarian version would involve wrapping the figs in prosciutto, but the saltiness of the goats cheese and acidity of the balsamic contrasts perfectly against the sweet nectar of the figs..

    1. I know, I can’t believe it either. I always thought they were gross! Little did I know I would totally fall in love and be hooked. You’re so lucky about that fig tree – that’s a dream of mine when I grow up 😉

    Wow this is absolute perfection, I love figs so much! I have been trying to get my hands on some fresh local figs for weeks now, I just haven’t come across any. I need to search high and low so I can make this. Yum!
